AW’s Saucy BBQ Sauce

Ingredients:

  • 2 cups catsup
  • 1/3 cup Bourbon
  • 1 cup brown sugar
  • 1/4 cup fresh lime or lemon juice
  • 2 tablespoons mustard
  • 2 tablespoons Worcestershire Sauce
  • 2 teaspoons Hot Sauce
  • Salt, Pepper, Garlic to taste

1. Mix ingredients together.
2. Let stand overnight to meld flavors.
3. Drizzle or Brush over meat while cooking.

Chipotle Mayonnaise

Ingredients:

  • 1/2 cup Hellman’s mayonnaise (use that other stuff and you’ll be slapping yourself!!)
  • 1/2 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon pureed chipotle chilies in adobo sauce
  • 1/4 teaspoon ground cumin
  • salt and fresh ground pepper — to taste

Combine all ingredients and keep covered in refrigerator. Keeps for one week covered.

Famous Dave’s BBQ Sauce

Ingredients:

  • 2 Thick cut strips of hickory smoked bacon (Spend a little more and get it from your butcher)
  • 1/3 cup chopped sweet onion (Vidalia is good)
  • 1/4 cup water
  • 3/4 cup peach schnapps
  • 1/2 cup baking raisins
  • 1 large jalapeno, finely diced
  • 2 large cloves of garlic, minced
  • 1/3 cup aged Alessi balsamic vinegar
  • 1/4 cup chopped sweet apple
  • 1/4 cup frozen tangerine juice concentrate
  • 1/4 cup frozen pineapple juice concentrate
  • 3 tablespoons molasses
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 2 & 1/4 cups dark corn syrup
  • 1 (12 ounce) can tomato paste
  • 1/2 cup packed light brown sugar
  • 1/2 cup Worcestershire sauce
  • 2 tablespoons prepared mustard
  • 2 teaspoons chili powder
  • 1 teaspoon Maggi seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon coarse ground black pepper
  • 1 teaspoon cayenne
  • 1/4 cup Kahlua
  • 1 teaspoon liquid hickory smoke

Fry bacon in a large saucepan until crisp. Drain, reserving 1 Tablespoon of the drippings. Eat the bacon.

Fry the onions in the reserved drippings, on medium high heat until caramelized or dark golden brown. Don’t burn. Reduce the heat to medium low. Deglaze the saucepan with water.

Stir in the Peach Schnapps, raisins, jalapeno and garlic. Simmer for 10 minutes or until the mixture is of a syrupy consistency, stirring occasionally.

Remove from heat and place the mixture in a blender with Balsamic vinegar, apple, tangerine juice concentrate, pineapple juice concentrate, molasses, apple cider vinegar, lemon and lime juice. Process until pureed and return to the sauce pan.

Add the corn syrup, tomato paste, brown sugar, Worcestershire sauce, mustard, chili powder, Maggi seasoning, salt, red pepper flakes, black pepper and cayenne. Mix well. Bring to a low boil, under medium heat, stirring frequently. Reduce heat to low. Simmer for 20 minutes, stirring occasionally. Remove from heat.

Stir in Kahlua and liquid smoke. Store, covered, in refrigerator.

Honey Mustard Sauce

Ingredients:

  • 2 Tablespoons mustard
  • 4 Tablespoons honey
  • 1 Tablespoon white vinegar
  • 1/2 cup mayonnaise (don’t you dare use anything other than Hellman’s)
  • 1/2 cup sour cream

Mix together in a bowl with wire whisk and serve.  Yields 1 & 1/2 cups

AW’s Jack Daniels Rib Glaze

Ingredients:

  • 1 cup Jack Daniel’s Whiskey
  • 1/2 cup dark brown sugar
  • 1 cup catsup
  • 1 teaspoons Worcestershire sauce
  • 1/4 cup vinegar
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Preparation:
Combine all ingredients: mix well. Brush ribs with a thin coating of glaze and place on grill. Continue to baste when turning ribs. Makes enough for 2 racks of 7 to 10 ribs each.

Also great on chicken wings!!!

Tennessee BBQ Sauce

Ingredients:

  • 3 cups prepared bbq sauce
  • 1/4 cup cider vinegar
  • 1/4 cup honey
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • dash hot pepper sauce

Combine all ingredients in bowl and mix well.

Cucumber Yogurt Sauce

Ingredients:

  • 1 cup fat free yogurt
  • 1/2 cup shredded cucumber
  • 1 teaspoon grated lime peel
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin

Combine all ingredients and chill before serving.
